When it comes to ramen in Hokkaido, the three most famous flavors are Hakodate salt, Sapporo miso, and Asahikawa soy sauce.
When visiting Hakodate, you must try the renowned Hakodate Ramen Kitchen Ajisai.
Hakodate Ramen Kitchen Ajisai originated in Hakodate, Hokkaido, with its main store located in Goryokaku.
I visited the “Red Store,” which is right next to the famous hotel, La Vista Hakodate.
Behind the noren curtain, there’s a wooden door, and after entering through the wooden door, there’s a transparent glass door.
Condiments on the table.
Menu.
I ordered a serving of gyoza for ¥350,
The bottom was a bit overcooked, and the taste was just okay.
I think Gyoza no Ohsho is slightly better.
The three most commonly heard ramen types in Hokkaido are Asahikawa soy sauce, Sapporo miso, and Hakodate salt.
I used to prefer miso, but now I can’t eat ramen that’s too salty,
so I find salt and soy sauce flavors more suitable now.
Salt Ramen ¥750
Topped with fu, a soft-boiled egg cooked to about 80%, and bamboo shoots.
The broth is light and not greasy, but the noodles are just average in texture.
Of course, I finished it all.

In conclusion,
My personal rating: ★★★ (3)
Hakodate Ramen Kitchen’s salt ramen is quite standard.
It doesn’t have any extra flavors, nor is it particularly impressive, but it’s not bad either.
Rating Criteria:
Five stars: Super delicious; would definitely buy again. If available in Taiwan, would buy it there too.
Four stars: Tasty; would eat again if visiting Japan.
Three stars: Not bad; worth trying once.
Two stars: Average; okay to try for the experience.
One star: Wouldn’t fall for it again (potentially bad).
